{recipe} Guacamole

Guac. It’s a staple in our house, especially on Taco night, which just so happens to be every Monday. If you follow me on Facebook, you know that my youngest loves to help in the kitchen and recently, I taught her the very important job of how to make guac.

A few years ago, we tried making guacamole at least 3 times never getting it right. The consistency was just never right, usually on the mushier side. Our persistence is strong, so we tried another time and finally got it right. Hard work pays off, right? It is one thing we are always asked to bring it to parties, get togethers, etc.

Our guacamole recipe is super simple. I do not measure any of the ingredients – it’s strictly seasoned based on taste. It basically comes down to the juiciness of the lime. There are times when a half a lime is more than enough and other times when I use a full lime. Our secret ingredient is the the key to our guacamole – mango! It gives the guac the perfect hint of sweetness! The combinations of salty, tart, and sweet will have your tastebuds doing a happy little dance!


We buy a sack of 6 avocados at Costco every week. Normally they are green. In order to ripen them, we put 2-3 in a brown paper lunch bag for a few days. They will gradually ripen over time and once they are ripe, we store them in the refrigerator.

Guac is the perfect accoutrement for your tacos or sandwiches, or it makes the perfect healthy appetizer!

  • 2-3 avocados
  • 1/2 red onion chopped
  • 1 mango peeled & chopped
  • 1/4 cup cilantro chopped
  • 1/2 - 1 lime juice of
  • pink salt to taste


  1. Scoop avocado into a bowl and lightly mash with a fork.

  2. Add chopped red onion, mango, and cilantro. Mix together. 

  3. Add juice of 1/2 lime and about 1/4 tsp salt. Taste. Add lime juice and salt to taste, if necessary.
