In our house, we eat tacos once a week. Through the late Fall and Winter, we have “Mexican Mondays” rather than “Taco Tuesday” because of my husband’s soccer schedule. He’d rather not eat tacos and then go play soccer – gee, I can’t imagine why! 😉 When his soccer schedule changes, likely we will go back to Tuesdays.
We try and limit the amount of processed foods we buy in our house, and that includes seasonings. Knowing exactly what is in our food is important to us. Not only does it contain unnecessary oils and sugar, but the product packaging also states, “Produced with Partially Genetic Engineering.” Thanks, but no thanks.
So I decided to make our own after looking up a few different recipes on Pinterest and normally I make a big batch at one time since we make tacos weekly. I use about 2-3 tbsp. of taco seasoning per pound of ground beef/turkey, along with 3-4 tbsp. of tomato paste. Of course, you can add a dash of red pepper flakes to spice it up! My girls are not big fans of spicy, so this is perfect for everyone. Dave and I add hot sauce or jalopeño peppers to garnish our tacos.
The best part of taco night is that I usually have lots of help in the kitchen. My girls have started to develop an interest in cooking, largely due to their obsession with Food Network. Every single meal we prepare is a mock “Chopped Jr episode,” ending with plating our food to a countdown and presenting to the family before we sit down for dinner. I absolutely love that they are so into learning how to cook because it’s not something I learned until I lived on my own. Josie loves to make guacamole – tonight she made it mostly herself (minus all of the chopping). Cady loves to help make black beans – her favorite taco addition!
Cooking dinner has given us a lot more family time and I absolutely love it! Teaching them HOW to make healthier, but delicious meals is awesome.
